dcterms.descriptionBananas, long used for making beer in Rwanda, are being converted to wine with the appellation controlee MiUe Collines (thousand hills). Rwanda produces a million tons of bananas each year, of which eight tons a day are converted to beer. The banana industry promotion bureau Ovibar has for ten years been seeking new uses for the country's major resource; bananas have also been used to make soft drinks, sweets and banana bread. Wine production is the latest deveIopment. To produce the wine, bananas are ripened, peeled, pressed, and spun in centrifuges. The resulting juice is then fermented in large vats. Nothing is wasted: even the skins, which are rich in potassium and calcium, are used to make fertilizer. The wine, like the beer, is not intended for export. It is enjoyed by Rwandans and the increasing number of tourists who are visiting the country and this reduces the need to import liquor.
