En la región andina, además de la papa, se domesticaron otras nueve raíces y tubérculos. Estos cultivos destacan por su alto contenido de fibra, antioxidantes, carotenoides, glucosinolatos, fructooligosacáridos y diferentes micronutrientes. No obstante, es el saber tradicional en torno al uso y las propiedades de estos cultivos, especialmente en lo referente a cuestiones de salud, lo que ha atraído la atención de instituciones de investigación, como el Centro Internacional de la Papa (www.cipotato.org). La ciencia ha comenzado a validar este conocimiento ancestral, lo cual está contribuyendo a una mayor valorización de estos cultivos, generando así oportunidades de comercialización previamente inexistentes. Las raíces y tubérculos andinos representan una excelente oportunidad para mejorar la economía de los agricultores y para mejorar la salud y calidad de vida de las personas.Item The lost crops of the Incas: Yacon, maca, and other Andean roots and tubers(Video, 2023-09-28) International Potato CenterAround eight thousand years ago, the process of domesticating cultivated plants began in various regions of the planet. In the Andean region, in addition to potatoes, nine other root and tuber crops were domesticated. These crops stand out for their high content of fiber, antioxidants, carotenoids, glucosinolates, fructooligosaccharides, and various micronutrients. However, it is traditional knowledge about the use and properties of these crops, especially in terms of health-related matters, that has attracted the attention of research institutions such as the International Potato Center (www.cipotato.org). Science has started to validate this ancestral knowledge, which is contributing to a greater appreciation of these crops, thus creating previously non-existent marketing opportunities.
